WINES

The fruit of our

efforts

All the wines are made in small batches in order

to respect their traceability and to be able to create the

ideal blends, as well as to have a good basis for

research, one of the pillars of the winery.

Our wines come solely from grapes from our vineyards and are made exclusively in our facilities, which work by gravity. We do not use pumps in the processes of solid movements, thus avoiding the unwanted effects of seeds breaking and achieving a better control of the skins quality.

The fermentations are carried out in different materials such as stone carved fermenters from the 12th century, stainless steel vats and foudres or French oak barrels. All this variety of materials allows us to provide the wines with different shades and nuances, creating a differentiated and unique vinification.

White, red, rosé, ancestral sparkling wine, sweet and semi-sweet wine, summarize the winery’s ambition. Many varieties, many methods, same style.

We want to make wines with a very clear style, maintaining freshness as the backbone and avoiding over-ripeness and over-extraction. We seek elegance and subtlety, but without giving up the complexity and roundness of the wines. No doubt, the grape plays, in this sense, a main role.

Majjan, Jhana and Taïka: special and unique.

Majjan (bone marrow in bone marrow) is our sweet wine made with semillon and sauvignon blanc and has about 200g/L of residual sugar. For Majjan, the grapes are left to overripe in the vineyard and noble rot is sought (botrytized grapes). It ages for 8 years in French oak barrels.

Jhana (meditation linked to silence and reflection) is a rosé wine made with merlot and petit verdot, which are macerated at a low temperature and then fermented in French oak barrels.

Taïka (magic in Finnish) is Castell d’Encus’ sparkling wine, made following the ancestral method (without adding sugar at the end of fermentation) and with 6 final atmospheres. We use sauvignon blanc and semillon in equal parts. Taïka will remain in the cellar for 7 years.

Acusp, Thalarn and Quest: our elegant reds
