Se forman durante el desarrollo de la uva, especialmente entre el envero y la madurez, dentro de las gl\u00e1ndulas de la piel.<\/p>\n<p data-start=\"599\" data-end=\"888\">Una gran parte de estos compuestos no se encuentran en forma libre, sino glicosilados: unidos a una mol\u00e9cula de az\u00facar. Esto los hace arom\u00e1ticamente inactivos, pero potencialmente liberables m\u00e1s adelante, tanto por el trabajo de las levaduras como por transformaciones qu\u00edmicas en el vino.<\/p>\n<p data-start=\"890\" data-end=\"1097\">En condiciones ideales (zonas frescas, insolaci\u00f3n moderada), el Riesling acumula un perfil terp\u00e9nico equilibrado y elegante, que puede dar lugar a perfumes florales (flor de azahar, tila) y c\u00edtricos sutiles.<\/p>\n<ol start=\"2\" data-start=\"1099\" data-end=\"1158\">\n<li data-start=\"1099\" data-end=\"1158\">\n<p data-start=\"1102\" data-end=\"1158\"><strong>Escasa asimilaci\u00f3n de estos compuestos por las levaduras<\/strong><\/p>\n<\/li>\n<\/ol>\n<p data-start=\"1160\" data-end=\"1391\">Las levaduras no metabolizan activamente los terp\u00e9nicos, y tampoco tienen capacidad eficiente para hidrolizar la fracci\u00f3n glicosilada. Es decir, durante la fermentaci\u00f3n, la mayor parte de los terp\u00e9nicos latentes permanecen ocultos.<\/p>\n<p data-start=\"1393\" data-end=\"1700\">Solo algunas levaduras (no Saccharomyces) o enzimas ex\u00f3genas pueden liberar parcialmente estos compuestos. Esto explica por qu\u00e9 el Riesling puede expresar su potencial arom\u00e1tico real despu\u00e9s de meses o a\u00f1os de evoluci\u00f3n, cuando la qu\u00edmica del vino, especialmente en condiciones de acidez, comienza a actuar.<\/p>\n<ol start=\"3\" data-start=\"1702\" data-end=\"1753\">\n<li data-start=\"1702\" data-end=\"1753\">\n<p data-start=\"1705\" data-end=\"1753\"><strong>Hidr\u00f3lisis \u00e1cida y su importancia en el Riesling<\/strong><\/p>\n<\/li>\n<\/ol>\n<p data-start=\"1755\" data-end=\"1932\">El mosto y el vino de Riesling, gracias a su pH bajo (normalmente &lt; 3,2), son un medio muy adecuado para que se produzca una hidr\u00f3lisis \u00e1cida lenta de los glic\u00f3sidos terp\u00e9nicos.<\/p>\n<p data-start=\"1934\" data-end=\"2114\">Este proceso rompe el enlace az\u00facar-terpeno, liberando los monoterpenos libres, que son mucho m\u00e1s vol\u00e1tiles y perceptibles arom\u00e1ticamente. Los principales compuestos liberados son:<\/p>\n<p data-start=\"2116\" data-end=\"2243\">Linalol \u2192 flor de azahar, lavanda<br data-start=\"2149\" data-end=\"2152\" \/>Geraniol \u2192 rosa, geranio<br data-start=\"2176\" data-end=\"2179\" \/>Nerol \u2192 notas dulces florales<br data-start=\"2208\" data-end=\"2211\" \/>Alfa-terpineol \u2192 pino, c\u00edtricos&#8221;<\/p>\n<ol start=\"4\" data-start=\"2245\" data-end=\"2295\">\n<li data-start=\"2245\" data-end=\"2295\">\n<p data-start=\"2248\" data-end=\"2295\"><strong>Impacto de la Botrytis cinerea (botritis noble)<\/strong><\/p>\n<\/li>\n<\/ol>\n<p data-start=\"2297\" data-end=\"2405\">La presencia de botritis noble puede transformar profundamente la expresi\u00f3n arom\u00e1tica del Riesling mediante:<\/p>\n<p data-start=\"2407\" data-end=\"2438\">a) Acci\u00f3n enzim\u00e1tica del hongo:<\/p>\n<p data-start=\"2440\" data-end=\"2646\">Enzimas como las glicosidasas del hongo s\u00ed pueden liberar compuestos terp\u00e9nicos que de otro modo quedar\u00edan ocultos.<br data-start=\"2555\" data-end=\"2558\" \/>Adem\u00e1s, descompone az\u00facares y otros precursores, generando compuestos arom\u00e1ticos nuevos.<\/p>\n<p data-start=\"2648\" data-end=\"2691\">b) Formaci\u00f3n de compuestos caracter\u00edsticos:<\/p>\n<p data-start=\"2693\" data-end=\"2908\">Fenilacetaldeh\u00eddo \u2192 rosa, miel<br data-start=\"2723\" data-end=\"2726\" \/>Tionoles derivados del furfuril \u2192 aroma de azafr\u00e1n, t\u00e9 negro<br data-start=\"2786\" data-end=\"2789\" \/>Lactonas y benzaldeh\u00eddo \u2192 almendra, melocot\u00f3n seco<br data-start=\"2839\" data-end=\"2842\" \/>Sotol\u00f3n \u2192 curry, frutos secos (especialmente en vinos envejecidos)<\/p>\n<p data-start=\"2910\" data-end=\"3049\">Cuando la botritis est\u00e1 bien gestionada, puede aportar una complejidad extraordinaria, sobre todo en vinos dulces naturales o late harvest.<\/p>\n<ol start=\"5\" data-start=\"3051\" data-end=\"3137\">\n<li data-start=\"3051\" data-end=\"3137\">\n<p data-start=\"3054\" data-end=\"3137\"><strong>Gran potencial de envejecimiento del Riesling en zonas fr\u00edas y su v\u00ednculo con el pH<\/strong><\/p>\n<\/li>\n<\/ol>\n<p data-start=\"3139\" data-end=\"3310\">Los grandes Rieslings de guarda (Alemania, Alsacia, Austria, Clare Valley\u2026) provienen de zonas fr\u00edas, donde la uva puede madurar lentamente y mantener una acidez muy alta.<\/p>\n<p data-start=\"3312\" data-end=\"3324\">Esta acidez:<\/p>\n<p data-start=\"3326\" data-end=\"3673\">Act\u00faa como conservante natural (inhibe la oxidaci\u00f3n y los microorganismos).<br data-start=\"3401\" data-end=\"3404\" \/>Estabiliza los compuestos arom\u00e1ticos y el equilibrio redox del vino.<br data-start=\"3472\" data-end=\"3475\" \/>Favorece la hidr\u00f3lisis \u00e1cida lenta, liberando aromas con el tiempo.<br data-start=\"3542\" data-end=\"3545\" \/>Permite la aparici\u00f3n de aromas petrolados (como el TDN, derivado del caroteno), que son t\u00edpicos del envejecimiento del Riesling.<\/p>\n<p data-start=\"3675\" data-end=\"3853\">Cuanto m\u00e1s bajo el pH (2,9\u20133,1), m\u00e1s largo y seguro puede ser el camino de envejecimiento. A 10, 20 o incluso 30 a\u00f1os, un gran Riesling puede ofrecer una arom\u00e1tica \u00fanica y viva.<\/p>\n<p>[\/et_pb_text][et_pb_image
