En aquest sentit, els components (soluts) d\u2019aquesta barreja no es podrien separar ni per centrifugaci\u00f3 ni per filtraci\u00f3. Per altra banda cal introduir el concepte de col\u00b7loide ent\u00e8s com una barreja heterog\u00e8nia en qu\u00e8 les part\u00edcules es troben juntes de forma irregular en un solvent, per\u00f2 no han aconseguit diluir-se.<\/p>\n<p>El vi \u00e9s una barreja molt complexa de subst\u00e0ncies procedents del ra\u00efm i d\u2019altres que es generen durant el proc\u00e9s de fabricaci\u00f3. Aquest proc\u00e9s comen\u00e7a amb la fermentaci\u00f3 com a primera etapa, continua en les seg\u00fcents tasques del celler i acaba en l\u2019ampolla. Contr\u00e0riament a una dissoluci\u00f3 perfecta (una barreja perfecta no separable), en el vi trobem for\u00e7a soluts en forma col\u00b7lo\u00efdal i a m\u00e9s amb una evoluci\u00f3 cont\u00ednua amb diferents reaccions com la polimeritzaci\u00f3, l\u2019esterificaci\u00f3, etc., que donen lloc a mol\u00e8cules inestables en el vi.<\/p>\n<p>Les principals fam\u00edlies de compostos que trobem en aquesta barreja hidroalcoh\u00f2lica que \u00e9s el vi s\u00f3n: sucres, \u00e0cids, alcohols, aldheids i cetones, \u00e9sters, compostos nitrogenats, fenols de diferents tipus, i compostos inorg\u00e0nics.<\/p>\n<p>Les precipitacions m\u00e9s comunes que trobem al vi s\u00f3n <strong>els precipitats tart\u00e0rics<\/strong>, <strong>els proteics i els col\u00b7lo\u00efdals.<\/strong><\/p>\n<p><u>Precipitats tart\u00e0rics<\/u><\/p>\n<p>La inestabilitat tart\u00e0rica \u00e9s la font m\u00e9s comuna i es d\u00f3na en forma de cristalls de bitartrat pot\u00e0ssic i en menor ordre de tartrat c\u00e0lcic. El vi t\u00e9 una elevada concentraci\u00f3 d\u2019\u00e0cid tart\u00e0ric i en funci\u00f3 del pH presenta diferents concentracions dels anions bitartrat i tartrat. Els bitartrats tenen una solubilitat redu\u00efda amb les sals de potassi i amb el cati\u00f3 calci en la forma de tartrat. La formaci\u00f3 d\u2019aquests cristalls dep\u00e8n de la concentraci\u00f3 dels anions i cations i de la temperatura. La velocitat de cristal\u00b7litzaci\u00f3 en la formaci\u00f3 dels cristalls tamb\u00e9 t\u00e9 el seu efecte en l\u2019estabilitat posterior.<\/p>\n<p>Cal esmentar tamb\u00e9 que la concentraci\u00f3 d\u2019etanol juga un paper important en la solubilitat d\u2019aquestes sals, de manera que a major concentraci\u00f3 alcoh\u00f2lica s\u2019afavoreix la precipitaci\u00f3. Les corbes de solubilitat ens indiquen que a m\u00e9s baixa temperatura hi ha una disminuci\u00f3 de la solubilitat i s\u2019ajusten aproximadament a l\u2019equilibri del producte de solubilitat t\u00edpic de les sals. Tinguem en compte que en una barreja tan rica com el vi, les concentracions sempre s\u00f3n complexes i no es pot mai simplificar a les simples corbes de les monosals corresponents.<\/p>\n<p>A tall d\u2019exemple, la solubilitat de les sals esmentades amb una temperatura de 0 i 20 graus, el factor de solubilitat \u00e9s aproximadament 2. I tamb\u00e9 a tall d\u2019exemple: amb una concentraci\u00f3 d\u2019etanol del 10% respecte a una del 20%, el factor \u00e9s aproximadament d\u20191.7. Els precipitats mai s\u00f3n purs, i existeix la interacci\u00f3 amb els fenols i els col\u00b7loides.<\/p>\n<p>Hi ha diferents opcions per reduir els precipitats cristal\u00b7lins, com per exemple baixar la temperatura, sembrar el tanc amb microcristalls i baixar la temperatura (possible tamb\u00e9 en continu), re\u00efnes de bescanvi, filtrats d\u2019osmosi, etc. Una opci\u00f3 pels vins de guarda \u00e9s esperar la precipitaci\u00f3 natural.<\/p>\n<p>Voldr\u00edem afegir, i aix\u00f2 \u00e9s important, que la pres\u00e8ncia cristal\u00b7lina al fons, al llom o als taps de les ampolles no presenta cap problema organol\u00e8ptic. Cal entendre que les prote\u00efnes actuen com a cations a pH baix i anions a pH alt. El punt isoel\u00e8ctric \u00e9s aquell que amb un pH determinat no t\u00e9 c\u00e0rrega global. En aquest punt isoel\u00e8ctric les prote\u00efnes tenen la m\u00ednima solubilitat. Un increment del pH pot tenir certa correlaci\u00f3 amb la inestabilitat del vi.<\/p>\n<p>I tamb\u00e9 fora necessari precisar que l\u2019efectivitat de les clarificacions com per exemple amb bentonita depenen del pH. La bentonita \u00e9s una argila utilitzada com a clarificant en el vi (\u00e9s un dels pocs clarificants no al\u00b7lergen). La seva c\u00e0rrega negativa fa que s\u2019uneixi a les prote\u00efnes amb c\u00e0rrega positiva i que aquestes precipitin, tot i que no \u00e9s un fenomen pur.<\/p>\n<p>Abans d\u00e8iem que les precipitacions cristal\u00b7lines no presenten problemes sensorials. Aqu\u00ed, en canvi, i degut a qu\u00e8 certes prote\u00efnes del vi incorporen subst\u00e0ncies organosofrades, quan hi ha difer\u00e8ncies en les fases de terbolesa, el vi pot presentar reaccions de reducci\u00f3 donant lloc a compostos de molt baix llindar de percepci\u00f3 (mercaptans) que produeixen olors desagradables.<\/p>\n<p>[\/et_pb_text][et_pb_image src=&#8221;https:\/\/castelldencus.com\/wp-content\/uploads\/2022\/09\/CE-Blog-01-min-scaled.jpg&#8221; title_text=&#8221;proves clarificaci\u00f3 amb bentonita&#8221; _builder_version=&#8221;4.19.2&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;][\/et_pb_image][et_pb_text content_last_edited=&#8221;off|desktop&#8221; _builder_version=&#8221;4.19.2&#8243; _module_preset=&#8221;default&#8221; text_font_size=&#8221;18px&#8221; custom_padding=&#8221;||||false|false&#8221; custom_padding_tablet=&#8221;|50px||50px|false|false&#8221; custom_padding_phone=&#8221;|25px||25px|false|false&#8221; custom_padding_last_edited=&#8221;off|desktop&#8221; global_colors_info=&#8221;{}&#8221;]<\/p>\n<p><u>Estabilitat col\u00b7loidal <\/u><\/p>\n<p>Els col\u00b7loides s\u00f3n compostos parcialment solubles, i aquesta solubilitat dep\u00e8n de la temperatura, de la polaritat del solvent i dels productes de solubilitat corresponents. Poden estar formats per diferents tipus de part\u00edcules, sovint de mida relativament gran.<\/p>\n<p>Trobem col\u00b7loides de tipus proteic amb pesos moleculars entre 10.000 i 60.000 daltons, polisac\u00e0rids, entre 100.000 i 500.000 daltons i altres productes m\u00e9s complexos. Els col\u00b7loides poden estar en un estat de supersaturaci\u00f3 (estat inestable) abans no precipiten. El car\u00e0cter gen\u00e8ric de carga positiva de les prote\u00efnes i negativa dels polisac\u00e0rids pot donar lloc a enlla\u00e7os entre aquests compostos parcialment solubles. El resultat final quant a solubilitat \u00e9s complex, ja que de cop pot incrementar-se i de cop ser m\u00e9s baix en funci\u00f3 dels components. Val la pena recordar que els polisac\u00e0rids en el vi es troben en concentracions d\u2019entre 300 i 1000 ml\/l, i tenen origen tant en el ra\u00efm com en els microorganismes de fermentaci\u00f3.<\/p>\n<p>Pel que fa al ra\u00efm, una gran part dels polisac\u00e0rids inclouen pectines. Tamb\u00e9 trobem polisac\u00e0rids amb galactosa, arabinosa, rhammosa i glucosa, aix\u00ed com tamb\u00e9 subproductes derivats de la podridura del ra\u00efm (betaglucans) amb pesos moleculars molt elevats.<\/p>\n<p>Quant als microorganismes de fermentaci\u00f3 (llevats i bacteris): els sacharomyces tenen alts nivells de manoses i alliberen 350 mg per litre de polisac\u00e0rids. Diferents llevats poden donar concentracions for\u00e7a variades. Tamb\u00e9 hi ha un alliberament de betaglucans per les bact\u00e8ries l\u00e0ctiques quan envellim sobre lies, creant una barreja de polisac\u00e0rids i prote\u00efnes (glicoprote\u00efnes). Esmentar que aquests col\u00b7lo\u00efdes poden inhibir la creaci\u00f3 de cristalls de bitartrat pot\u00e0ssic.<\/p>\n<p>Per \u00faltim, entra aqu\u00ed la barreja dels pol\u00edmers de fenols amb les prote\u00efnes del ra\u00efm. Aqu\u00ed apareixen precipitats en funci\u00f3 del pes molecular. Per exemple: els d\u00edmers de fenols i certs petits p\u00e8ptics s\u00f3n responsables de la inestabilitat en for\u00e7a vins.<\/p>\n<p>&nbsp;<\/p>\n<p>En resum, \u00e9s important entendre que els precipitats cristal\u00b7lins no produeixen cap efecte nociu al vi, no s\u00f3n cap problema. Els procedents de prote\u00efnes, en canvi, poden ocasionar aromes de redu\u00eft en els vins. La precipitaci\u00f3 de mat\u00e8ria colorant no \u00e9s res negatiu per al vi. Els fenols, antocians i aldehids formen compostos complexes que tenen una estabilitat limitada en el temps, i al final acaben precipitant.<\/p>\n<p>[\/et_pb_text][et_pb_divider color=&#8221;#babab7&#8243;
